Coconut Bacon

Serves: 3½ cups
Ingredients
  • 7 ounces dried coconut flakes, about 3½ cups
  • 5 tablespoons pure maple syrup
  • 3 tablespoons tamari or soy sauce
  • 6 teaspoons liquid smoke
Instructions
  1. Preheat oven to 350 degrees F and line a baking sheet with parchment.
  2. Place all of the ingredients in a medium-size mixing bowl and gently stir to coat the coconut flakes.
  3. Spread the coconut mixture evenly over the parchment and place in the oven.
  4. Bake for 15 minutes. Turn the coconut flakes, pulling the outer edges to the center, and spread evenly. Bake another 5 minutes and repeat the stirring. Bake another 5 to 10 minutes, until the coconut flakes are browned (but not burnt).
  5. Cool and place in a quart-size jar and seal.
  6. Refrigerate for up to 2 months
