Elderflower Cordial

Serves: 4 cups
- 20 elderflower heads
- 4 cups water
- 8 cups sugar (yes, that's a reduction)
- 2 organic lemons, thinly sliced
- 1 organic orange, thinly sliced (optional)
- Shake any bugs off of the elderflowers. Snip off the tops of the flowers, discarding the main stems and leaves.
- Place all of the ingredients in a large stock pot and bring to a simmer. Stir gently.
- When the sugar is dissolved, turn off the heat and allow the syrup to cool to room temperature.
- Cover tightly and let steep for 24 hours.
- Bring the syrup back to boil one more time. Allow to cool.
- Strain through 2 layers of cheesecloth.
- Place in small freezer containers or ice cube trays, and freeze for up to 6 months.
